A guide to living as a gay man in China
1. Relationship- Marriage Eight years ago, The Guardian ran a “weekend magazine gay special”, Emma Brockes wrote “gay parenting: it’s complicated”.
In 2013, Julia Preston reported “with no shortcut to a Green Card, gay couples leave U.S.” on The New York Times.
For gay couples in China, they can’t register as civil partners, they can’t get married.
2. Money In Brokeback Mountain, the father ended up living in a camper van, maybe with a little under his name; his lover ended up getting beaten to death. This tragedy on The New Yorker tried to tell us gay men’s lives may not be easy. In China there is no gay rights group. Little help could one get when facing discrimination in jobs. Employees could be gay friendly and could be not. Who cares.
You must keep yourself financially strong, either with a solid technique background or knowledges of business running, if you are a gay man.
Jason Goldberg, one of the creators of online design site Fab.com was graduated from Stanford Graduate School of Business. He is gay. Fab was said to be a failure. Even professionals like him can’t avoid.
3. Sex BBC Radio 4 just ran a program titled “Big Disease with a little name”, in which a gay man told about his experience in the 90s of getting HIV from sex with his German boss.
HIV is not a gay men special disease. But as Dan Lepard noted on his Instagram, many gay men at his age died with AIDS in the 80s. So, gay sex has been tagged with this sexually transmittable disease.

Osaka airport introduces canine comfort room, complete with pole
TOKYO (Reuters) - Osaka’s Itami airport is setting up a toilet area for travelling dogs, complete with a pole for them to cock a leg on.
The toilet, in a fenced-off yard outside the terminal, will also have a shower and water bowls, operator Kansai Airports said. The “pee pole” will flush.
Designed to encourage dogs to relieve themselves before boarding domestic flights, it will be the first such canine comfort facility at a Japanese aiport.
Service dogs are permitted to use disabled-accessible toilets in the terminal but the mess must be cleaned up.

Un délicieux feuilleté à servir en entrée chaude
Chef Simon Difficulté moyenne Pour 8 personnes.
1 - Découper les paumes de ris de veau déjà blanchies pochées et épluchées en gros dés.
2 - Sauter au beurre avec les échalotes ciselées pour obtenir une simple coloration de surface (il est inutile de fariner) n’oubliez pas de saler et poivrer en suffisance.
3 - Hors feu ajouter le persil haché.
4 - Partager le feuilletage en 2 (nous avions préalablement réalisé 1 kg de feuilletage rapide).
5 - Abaisser sur une épaisseur de 5 mm.
6 - Tailler 16 rectangles de 10 cm sur 7 cm (environ).
7 - Dorer les côtés au jaune d’oeuf et placer les épinards à la crème au centre, sans débordement.
8 - Déposer les morceaux de ris de veau sur les épinards.
9 - Placer la deuxième abaisse de feuilletage bord à bord et souder en pressant d’abord avec l’index puis en appuyant légèrement avec le dos d’une lame de couteau. Chiqueter les bords pour éviter toute fuite de la garniture.
10 - Percer la cheminée, nécessaire pour éviter le soulèvement du couvercle lors de la cuisson.
11 - Décorer éventuellement la surface et passer de la dorure.
12 - Cuire 20 minutes à 180°C en chaleur tournante. Moduler et vérifier la bonne conduite de la cuisson en fonction des performances de votre four. Après cuisson pensez à lustrer au beurre fondu avant de servir.
Pour 8 feuilletés de ris de veau
500 g de pâte feuilletée - 2 paumes de ris de veau pochées - 200 g d’épinards en branche cuits au beurre et liés à la crème - 3 échalotes - persil haché.

Les madeleines
Madeleines de Commercy ou d’ailleurs, avec leur bosse comme il se doit !
Chef Simon Préparation : 20’ Cuisson : 5’ Difficulté moyenne
1 - Beurrer et fariner les moules à madeleines.
2 - Dans un récipient mettre la farine en fontaine et ajouter la levure chimique.
3 - Ajouter les oeufs.
4 - Débrouiller légèrement les oeufs et ajouter le sucre.
5 - Mélanger à nouveau et ajouter le lait.
6 - Continuer de mélanger au fouet et ajouter le beurre fondu le zeste de citron ou la vanille selon votre choix.
7 - On obtient une pâte bien lisse.
8 - Verser dans les moules à la cuiller, au trois quart de la hauteur et laisser reposer 10 mn.
9 - Cuire au four préchauffé à 200°C entre 5 et 8 minutes. Enlever les madeleines des moules avant le refroidissement.
Recette pour 36 madeleines environ
3 gros oeufs - 200 g de farine - 150 g de sucre - 200 g de beurre fondu - 1 sachet de poudre à lever (soit environ 11 g) - 5 cl de lait - quelques râpures de citron ou de bergamote.

Save Grandma or save the economy? It depends
Should we sacrifice Grandma for the GDP? That more or less sums up the debate in much of the U.S. media over the past week, ever since U.S. President Donald Trump mused aloud to a Fox News reporter about relaxing the already patchy American shutdown of social and economic activity in time for Easter – a position he has since recanted.
Underlying Mr. Trump’s initial impulse were several supporting assumptions: that the impact of the coronavirus epidemic is unlikely to be far out of line with previous experience, especially with the flu; that it mostly affects the elderly; and that the economic costs of the kind of social-distancing measures governments have imposed to date are too great, even in the short term, to be justified.
Ergo: sorry, Grandma. Mr. Trump didn’t say so explicitly, but a number of his more idolatrous supporters did: If some number of the elderly have to die prematurely to save the economy, so be it. Or as Mr. Trump put it, on Twitter, “WE CANNOT LET THE CURE BE WORSE THAN THE PROBLEM.”
There’s lots wrong with this. The threat represented by the coronavirus is orders of magnitude worse than the flu. The flu kills roughly 60,000 Americans annually, at most; the coronavirus could kill as many as 2.2 million, according to an influential study by experts at the Imperial College of London. Death rates are much lower for the non-elderly, but not insignificant; nor, as important, are hospitalization rates. And an overwhelmed hospital system would lead to many more needless deaths, not just among coronavirus sufferers, but patients with other conditions.
What’s not entirely wrong, however, is the notion that economic costs must be taken into account even as we try to save lives. This is a point lost on those whose response to Mr. Trump’s musings was, as his presumptive Democratic rival Joe Biden put it, that “no life is worth losing to add one more point to the Dow.” Maybe not the Dow, but the economy? How many lives saved is worth how many trillions of dollars of lost output, lost jobs and everything that goes with either? Or let me put it even more provocatively: How much is one life worth?
If the answer is “any amount” or “infinite,” that is not a position that anyone actually believes, whether about other people’s lives or even their own. Mr. Trump’s half-right on this: We do not shut down the entire economy in response to the flu each year, or in response to similar carnage on the roads. (One suspects the difference is novelty: If the automobile had just been invented, and it were known in advance that it would kill at least 36,000 Americans every year, I doubt it would be allowed on the market.)
So we are not talking about saving every life, or preventing every death from COVID-19: We are trying to stave off a calamity, to prevent a truly catastrophic loss of life. The “cure” is admittedly blunt, and costly in the short-run. But it is working. The average growth rate in the number of cases, worldwide, is down to less than 10 per cent a day – not salvation by any means, but a third as fast as a month ago. The Imperial College experts, in a new study, estimate that social-distancing measures enacted across 11 European countries have saved 59,000 lives to date – 38,000 in Italy alone.
Is it worth it? Let’s stipulate that the trade-off between fighting the epidemic and saving the economy is not so stark as might be imagined. An economic collapse would surely cost a lot of lives in different ways; conversely, leaving the epidemic to rage unopposed would lead to a great deal of lost output on its own. But accepting that a shutdown saves more lives and costs more output versus the alternative, what are the terms of the trade-off?
There is actually something of an industry among economists in assessing these things, based not on some ghoulish calculus of their own, but people’s own “revealed preferences.” You’re thinking of buying a smoke detector for your home, at a cost of x dollars, knowing it would reduce your chances of dying in a fire by y per cent. You decide it’s not worth it. Presto: you have just assigned a value to your own life, equal to x/y. Studies of these and other decisions yield remarkably consistent results: a “value of statistical life,” as reported in the Washington Post and FiveThirtyEight, of US$9-million to US$11-million.
Suppose, then, that social distancing succeeds in reducing the U.S. death toll from 2.2 million, the worst-case scenario, to “only” 100,000. That’s a cool US$21-trillion in lives saved, worth about as much as the entire U.S. GDP. Save Grandma.

5 - Le coupe pâte va permettre l’amalgame sans développer le gluten, sans chauffer la pâte et sans la rendre élastique.
6 - La détrempe est molle, collante et n’a aucun corps. Au toucher, elle est froide ce qui montre qu’elle n’a pas subi de pétrissage donc un développement limité du gluten et de l’élasticité.
7 - On voit bien sur la photo que cette détrempe n’a pas de corps. Au toucher on ne rencontre pas de résistance. C’est le but recherché dans cette technique !
8 - Former une croix ou une étoile à quatre branches avec cette détrempe en réservant une partie boursoufflée au centre.
9 - Étaler au rouleau chaque branche de la croix et déposer la matière grasse sur la bosse centrale. La détrempe et la matière grasse doivent avoir plus ou moins la même consistance.
10 - Replier chaque bande une par une pour envelopper la matière grasse avec soin.
11 - Avant de replier la dernière branche souder légèrement au rouleau pour assurer l’étanchéité.
12 - Étirer la dernière langue de pâte de façon à envelopper entièrement le pâton (dessus et sur les côtés).
13 - Répartir la matière grasse dans le pâton en tapotant doucement et régulièrement avec le rouleau. La matière grasse se répartit équitablement sans percer le pâton.
14 - Il est primordial de bien former le premier pâton. Continuer à tapoter avec le rouleau. Petit à petit l’abaisse prend forme. Cela évitera au beurre de transpercer la détrempe et donc de donner un feuilletage inégal.
15 - Abaisser sans forcer surtout les 2 premiers tours. La pâte est encore fragile et ne doit pas se déchirer. Fariner légèrement et ôter l’excédent de farine à la brosse. Ne pas forcer au risque de voir le beurre transpercer la fine couche de détrempe. Les premiers tours sont courts.
16 - Replier une extrémité de l’abaisse sur elle même en ôtant l’excédent de farine à la balayette.
17 - Replier l’autre extrémité sur les deux premières. L’abaisse a été pliée en 3 parties égales.
18 - Veiller a ce que les 3 épaisseurs de l’abaisse soient devant vous et soudez les en appuyant légèrement avec le rouleau à chaque extrémité. Le premier tour est terminé. Abaisser à nouveau comme sur la photo 15 pour commencer le second tour. Faire 6 tours au total. Filmer et mettre au frais.
Pour cette recette de pâte feuilletée rapide
500 g de farine - 300 g d’eau - 5 g de sel (soit un poids total de 800 g) - 400 g de beurre sec ou margarine à feuilletage si vous en possédez ou à défaut 400 g de beurre manié (300 g de beurre + 100 g de farine) - 1 coupe-pâte - 1 rouleau - 1 couteau d’office - 1 éminceur. Prévoir un peu d ‘eau et de farine supplémentaire pour les mises au point et pour abaisser la pâte.

Eplucher et évider une pomme
Sans vide-pomme.
1 - A l’aide d’un couteau économe, piquer au niveau du calice de la pomme.
2 - Et appliquer un mouvement circulaire.
3 - Ôter le morceau et faire de même de l’autre côté au niveau du pédoncule.
4 - Peler le fruit.
5 - Citronner pour éviter l’oxydation.
6 - Couper en deux.
7 - Ôter le reste du trognon au couteau. La pomme est prête à être détaillée en lamelles pour réaliser une tarte fine ou en quartier pour une tarte Tatin.
8 - Si vous avez besoin de belles tranches rondes pour beignets ou pommes séchées, peler la pomme, citronner…
9 - Et couper en tranches de l’épaisseur voulue.
10 - Ôter ensuite la partie du trognon au centre de la pomme avec un emporte pièce.
11 - On obtient une rondelle régulière pour les beignets et une découpe centrale esthétique pour les pommes séchées par exemple.

Le plus simple des gâteaux.

1 - Mettre les oeufs et le sucre dans un cul-de-poule.
2 - Blanchir ensemble.
3 - Incorporer le beurre fondu refroidi en une fois. Mélanger. Obtenir une pâte lisse.
4 - Ajouter la poudre à lever.
5 - Incorporer la farine tamisée.
6 - Obtenir une pâte homogène qui forme le ruban.
7 - Verser dans un moule beurré et fariné et placer au four 40 minutes à 180°C (th 5/6).
8 - Démouler en retournant le moule.
9 - Décorer selon vos envies, glaçage, chantilly, fruits ou poudrer au sucre glace avec pochoir.
10 - Ici un glaçage au sucre glace et jus d’orange sanguine.
11 - Très bien aussi en gâteaux individuels (taille muffins).
